Here is a super cheap, fun and not *too* complicated idea! I am not a cook, but we had a blast making these. We used the fortune cookies to draw names for our Secret Santas this year! (We mean business when it comes to the 'no peaking' rule!)

So the ingredients are easy peasy here it is:
  • 1 egg white
  • 1/8 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 cup unbleached all-purpose flour
  • 1/4 cup white sugar
See? Easy. You'll also need pieces of paper with fortunes (or in our case family members names). I would recommend not using washable markers as the heat could cause the ink to rub off. I just used a permanent.

  1. Set your oven to 350 (the original recipe called for 400, but that was WAY too hot for my oven)
  2. Wisk the egg white and the vanilla together so it is a little frothy in a medium to small bowl. 
  3. Sift the flour, sugar and pinch of salt in to the egg mixture. Mix. I added a 1/2 teaspoon of water to it if it seems a little thick. You can decide through trial and error if you need to add water.
  4. Grease the heck out of your pan - trust me, you don't want that hard batter to stick.
Once you have it all mixed together, take a teaspoon and fill it up. Plop it on the pan and with the back of the teaspoon gently spread out the batter so the layer is so thin you can kind of see the pan through the batter. (If you don't get them thin enough, the texture will end up like a pancake). Make them about 3 to 4 inches in diameter. Add sprinkles if you want to have fun fortune cookies! Only bake two or three at a time, you need them to stay hot while you shape them.
Stick them in the oven for about 4 to 5 minutes (if you decided to cook them hotter than 350, try 2 or 3 minutes). You know they are done when the edges are golden brown, the middle will still be light.
Make sure you are all set to create the fortune cookies before you take them out of the oven: Are the fortunes written? Do you have a flat surface for folding hot cookies out? Is there a pot holder to set your hot pan on?

Now, the creating will take some practice so be prepared for your 1st, 2nd, heck, maybe even 3rd tries to look awful, but in the end - no sweat. If you end up messing up your whole batch, it cost like, what 28 cents? ;)

Ok, so the timer goes off and they look golden. Now - hurry like the dickens!!! Once you take that pan out of the oven, get moving. If your batter cools, it sets and stays set.

We were in such a hurry to get them done before they cooled we couldn't get pictures.  But here is how you fold them:

1. Hurry and flip the cookie upside down on a cutting board. Place the fortune (or in our case a family member name) in the middle of the dough.
2. Fold them in half while they're still hot. (You'll be singing 'HOT HOT' while you do it, but it's worth it) Press the top edges together
3. Place the middle of the folded cookie on the edge of a cup.
4. Then 'fanned' the edges, of the now folded cookie, downward towards each other so it made the fortune shape.
5. Wa-la! Give them a minute to let them set. (It might be helpful to place them in a muffin pan, so the shape stays until they set).

Now you hand them out and EAT THEM!
